Considering that one of it's attacks are nigh undodgeable without being on a mount, and that that attack will kill most players... I would say your assessment is correct, you basically can't beat it in co-op.

Since you need help though, some advice: To dodge the flying breath attack, look for the cue of rot forming around the mouth while you are nearby, mount up, then once it becomes airborne, go as fast as you can towards and to the the side of it. As for the rest of the attacks, that's standard dragon fare and should be easy.
