what kills most people on that wolf is him spamming triple glintblades into forward chargebite spam. that combo has INSANE tracking. most people make the mistake of rolling the blade and then his bite WILL punish that roll.
its best to destroy the benches in the room asap to gain needed space and then you can just RUN to one side instead of rolling to dodge the blades. thus you can still roll for the followup bite spam. the rest of his attacks are rather easy to avoid.
he is definitly one of the more annoying minibosses in the game due to his constant movement spam.
upgrade level 3-4 is normal for that boss upgrade wise. you can have more of course. you can ALWAYS have more.
as for summons if you use spirit ashes get a good one. banished knight oleg and his twin are by far the best early game summons both are found in limgrave. use these instead of the soldiers. much better ai. more aggresive. way more tanky. they dont call him broleg the gigachad for no reason.

it all depends on how much you are willing to use the tools this game offers you.
If you do use everything -> the game is a complete joke even in lategame
Hell even Malenia is a joke with fully upgraded RoB and Mimic.

Its just that you can easily overlevel him and then he is easy.
I also find the "red wolf" to be a difficult enemy (for both my caster and my current char, who swings big weapons). Very fast - basically Sif and the Royal Rat Authority on steroids.
Overall though, the name of the game here is just getting acclimated to what enemies do and what you can do to in response. For red, having a summon to keep its attention split is a good strategy that can save you from it stacking the impossible one-two combo on you.
