Can you use mods and play online?

I'm asking because I've see a couple of really fun mods like you looking like Shrek or Torrent being Donkey or Thomas the train, and I wish to know if I can install these mods and still be able to play online. I just wish to know if I invade or get invaded if I will still look like Shrek just for the fun of it. I have never modded any of the souls game before (and dunno how to do it honestly) but now that I get the chance, I'd like to try *if* this doesn't break the game/corrupts the saves.

You probably can, but you're not supposed to and you run the risk of getting banned if you do.

I believe you might be able to soon with the seamless co-op mod (when that comes out) as it doesn't use the official servers.

My point is if you use other mods while using that mod, you can play online with people and not get banned because, again, you dont launch the game in online mode.

Such mods are purely client side, so no, even if it worked - which it likely won't - only you would see the different skins and models.
