Elden ring is worst game of all souls games.
Nioh 1 & 2 are also great with better combat than the souls games but stages instead of an open world.
If you want something else that could be of interest consider the Ys series. They're not exactly the same as FROM games but they're something that may be worth checking out if you like FROM games. For example Ys Origin, Ys Oath of Felghana, or Ys Lacrimosa.
Nioh is also another franchise of interest (mind you the story telling is truly poop tier there, just be warned).
Witcher 3 could also be of interest.
Combat is quick, snappy and extremely dynamic, you don't have to worry about builds or open world trappings so the enemy encounters are tailored to always be challenging and interesting demanding new tactics.
There are some repeated mini bosses, but honestly even that didn't bother me since they usually had upgraded movesets and were just a joy to fight. Plus the maps themselves are beautiful and a joy to maneuver and hunt down enemies.
Just know it's not a Souls game, you are immortal and there are bonfire equivalents, but it plays very differently
