That's not even counting all of the unique mini-bosses in the game, though many do have repeats - you're left with countless examples of enemies like the Ulcerated Tree Spirits, Crucible Knights, Leonine Misbegotten, Death Rite Birds, Godskin, Dragonkin Soldiers, regular Dragons, some other dragons that you fight multiple times (lightning theme), Loretta, Gargoyles, and countless NPC invaders and other types of enemies.
So honestly, you're flat-out wrong here. If you're going to make a bait thread, at least try to be slightly more accurate with your counting.
Even Godrick, could also add the NPC bosses.
and that are only 2 which you forgot. you clearly havent done questlines. mohg is even a great rune aka Miquella ... but ohwell. you really know this game #irony

Same for Legacy dungeons.
The main dungeons including the semi legacy ones are also pretty great. The best exploration has ever been in the Souls games.
So what we have here is the objective quantified data of how many "unique" appearances actually happen and the subjective qualitative feeling and impression the game gives by constantly reusing them.
If the former, then there might be quite many, if the latter, then the game all the time seems to stretch content artificially.
How often do you fight the first 2 bosses? 3 times? 4 times? How often do you fight the Duelant? 12 times? Like 6 times in a dungeon and 6 times open field?
How often do you fight Astel? 3 times?
How often do you fight a troll or golem as a boss? Godskin Apostel? Tree Spirit?
6 Times each?
See, yeah each of those is a unique enemy, but its not a unique boss encounter, because unique would mean it happens once. But all of those are fought sometimes a dozen times.
Thats not unique, thats excessive.
All in all there are only like half a dozen bosses in the game that are not constantly reused and recycled.
No matter how we count it, i have played the game a lot, but its much worse quality-wise than the Souls Games, because of the constant reusage of enemies with slightly adjusted color patterns.
And the second problem that comes with it, is the question whether they are actually fun.
In my opinion only the major boss fights are actually fun. Malenia, Godfrey, Morgott etc are fun.
Tough, but fun.
None of those sidebosses are actually fun to fight. Often too weak, sometimes absolutely annoying.
But fun? Nah.
However, no matter my opinion on the fun they provide:
Elden RIng might have quantity, but not quality.
Even if you have 10 dragons with a different name, they all play out the same way only with different colour patterns.
One dragon shoots a blue flame, the next a red one.
Just because it has a different name applied, doesnt make it unique.
The Magma Wyrm in the Snowfields isnt different to the one in the Gael Tunnel or Mt Gelmir.

And as pointed out, "unique" is a matter to be defined. Agheel and Borealis for example are the exact same enemies with different colours.
Cool, 2/3 of the dragons are only different by their skincolour.
Thats what "recycled" means.
