Crucible knights for me are my favourite enemies as they truly test my skills as a souls player. If there’s one thing I wish is that there are more of them in the game not just 14!

the first (normal progression path) Knight down in the hidden area of Stormveil is there to teach you; there's a reason you get the Buckler in Stormveil...it's called good game design; it's the same reason why there's so little room where you fight this Knight: to teach you how to parry.
the only attacks where you either gotta space, dodge or block are his FAITH attacks; so lure his normal attacks: parry'n dodge all shinies.
believe you me once you get how parry works nearly Crucible Knights will become easy pickings.
If you manage the backflip AND the dash attack + 1 more jump attack, you may even poise break him. He usually doesn't allow that, though.
Most of the free range knights, you can just punt off some cliff or bait their winged charge, so they kill themselves like the ♥♥♥♥♥♥♥♥ they are.

Since they often do not allow the follow up bloodhound step or jump attack, I found it easy to bait them in an attack from mid range so that there's enough time to start bloodhound finesse. If timed correctly, he will run into your attack while you make a jump backwards. From there just repeat the process (just make sure there room behind you).
For all the later game Crucible knights, I'd just blow them up. Like get the infinite FP flask, then ambush with Ranni's Moon>comet, or something like that. They'll be at half health before they even turn around, and the spear knights would just die.
For the boss fight with 2 crucible knights, I think I had the greatshield soldiers spirit ash tank. Killed the spear knight first, then the other.
I could beat the early game Crucible Knights with any build at this point, as long as I have a fast weapon. The only thing I struggle with still are the tail attacks. I haven't tried anything besides sorcery for the late game Crucible Knights though.

Depends which one you're dealing with, i assume Ordovis since you meet the Siluria ones only after
Crucible Knights have lengthy combos -if you keep staying in front- they will reset their attacks if you move around them, in 1st phase 99% of their attacks don't actually hit you if you're behind them, the hitboxes are also very precise so you can crouch, jump or walk around them to avoid the attacks and strike
Also, when they rise the shield, hit them, count to three and then dodge, they will ALWAYS do a delayed shield bash with no variable timing, and with precise timing, you can punish them HARD due to the endlag on it.
I adore fighting Crucible Knights tbh, they're immune to pretty much every status effect and is truly just a mano-to-mano swordfight prowess battle, cheese with no form of actual battle knowledge wont help you with them.
