What is purpose of NG+?
So, I finished Elden Ring. I took my time to explore most of area along the way and it took me around 200 hours to beat final boss of the game. I then took another 30 odd hours to tie any loose ends, even found few side dungeons I missed on my first pass-through.

I finally moved to New Game +, or Journey 2, only to find out that everything in my path dies in 1 hit, bosses take 5 or 6 hits to kill. I enjoyed this power for a while, run around few places to kill few dragons and bosses that gave me trouble in NG. However, this feeling did not last for very long. I'm now getting bored retreading through lands of Elden Ring since initial awe and exploration fervor is no longer there. Very few combat encounters represent a challenge and if any it is more frustration than need to overcome difficulty that drives me.

Only thing that really still keeps me playing are those few quests that I missed or broke during my first journey. I'm not sure it will be enough to plow through the game's more annoying parts.

What are you doing in NG+ and what do you want to achieve by replaying the game again?

Mostly to collect what you missed in journey one, but yeah I don't see myself replaying this more then +1

Further down the line bosses will be harder. But I personally plan to just rush to NG+5 at least before I play normally again, specifically due to how weak everything will be. And shooting myself in a knee isn't something I like doing to increase difficulty :D

Every new game plus are initially you demolishing everything and since this is an open world, the entire area From Liurna to Castle Mourne is definitely easy, however since it's a new game plus and you already explored well enough in the first run closing all the quests and finding some dungeons you missed, you can now basically finish the game in 20 hours, when you reach the "mid game" and trust me, it takes about an hour from the start of the new game to reach the mid game, you can basically start to see the real difference, going back to Malenia for instance it's always a refreshing experience

Using different weapons/builds.. different routes/tactics without the need to run through everything.

Finding everything I missed the first time (within reasons: I don't care about being a prick to an NPC just for another talisman). Obtaining all the boss weapons this time or completing the full decks of sorceries. Also trying different builds

Reaching the New Game + that makes it more challenging than the first playthrough which (on average) starts as soon as New Game +4. If it is like previous Souls titles the difficulty is soft capped at +7 so that would be my Goal, finishing the game on the "hardest" difficulty. But for now I'm merely creating twinks and play different weapons/stiles. Fooling around is after all the best thing about these games in my opinion.

Plus, if you are into pvp you need stats as high as possible. NG+ gives you more runes so... you do the math.

Almost every boss us easy though it's only until late game that bosses tries to ramp up with you. Either way wouldn't be attempting a ng+ game is too big for me compared to DS3 which I Ng+7.

I agree that the scaling for NG+ is not enough for the first half of the game. The enemies should really be buffed to accommodate at-least a 50-damage stat scaling character. The second half however plays fine.

The purpose of NG+ is to choose different paths on quests or complete ones you missed, obtaining rare or finite items (like ancient dragon upgrades), finding duplicate magical/rare/boss weapons, and completing the game again on your completed build from the start. Also, if you stay at a community level (150 or so right now), you can do a "dried finger" run, also known as a "taunters tongue" run where you will engage in PVP along the way. This is more fun in dungeons and not the overworld.

If the game is like previous Fromsoft titles, the game will scale into NG+7. In Elden Ring, this can take forever to reach since the game is so damned massive.
