How do I avoid joining Volcano Manor?
Should I still do their assassination quests?

you don't need to join or do anything for them you can literally ignore the whole area.
the assassination quests will give you some rewards but aside from the rams armour its not really worth it. IMO

you can still join them but never do the quest so it dosnt affects your possible ending ^^.

Yes, you can completely ignore that area but you will miss a lots of cool armor set.

There is literally no point to not doing the assassination quests. The only NPCs you kill through them are only seen by their summon signs and have no consequence on any plotline. Also, you get several very good items through doing these quests that can't be obtained anywhere else.

However, you can turn down the pledge to joining the Manor entirely by taking the alternative entrance via dying to the Abductor Virgin at the bottom of Raya Lucaria, then jumping off the cliff to your right and running around until you find a grace.

Either that, or you take the pledge so you receive the key to get into the Manor from the front entrance, and then ignore all the quests like nothing happened.

You should probably do the assassinations. They have completely zero consequence on the story and also provide a number of fashionable outfits. You don't want to miss it, especially if you are wanting more choices of heavy armour.

I beat Godskin Nobel, and Elder Wyrm, but is there a point of no return where I join Volcano and shun Ranni?

I joined and figured if it affected anything I well change it on the next play through. I see why you want to know. This game like all open world games are about choices. on a first play through you want to know what it affects the fun is to make a choice and see what happens. That's why this game offers NG+ and multi able saves.

The Volcano Manor questline does not affect Ranni or anything else that matters outside of the location. Killing the main boss of VM can end the assassination quests and Rya's side quest prematurely and make most NPC leave the location. Nothing is touched anywhere else.

The best sets are from the assassinations. The Scale set is fairly heavy and is a solid choice for mixing and matching plate armour fashion. The Raging Wolf set is one of the main outfits featured in the games promotional material. The Bull Goat set is arguably the most valuable as it is the heaviest set in the game. You also get the set that Hoslow wears but I don't think it stands out for any reason.
