Report a translation problem
1) The beta class starting stats are pretty beefy when compared to the usual Soulsborne starting stats. This is as Miyazaki intended so that casual players and journalists would be able to see more of the beta. The armor sets and equipment starting out will be different too.
2) Level scaling for stats is extremely upscaled in the network test. You get significantly more improvement per point investment during levelup than you would get normally, again intended so that people playing the Network Test wouldn't need to farm for hours to get the stuff they need.

(Basically guesses i made from messing around with the character creator so obviously take it with a grain of salt)
also it is confirmed some of those classes won't make it in, if you played dark souls 3 CNT it had complete different classes consisting of mid game gear
Take the Autumn foresty area for instance in the gameplay demo where the massive creepy hooded things are wandering about. Freaky. And, at night, there are these absolutely terrifying wooden painted manniquins wandering about.
Kinda makes you wonder what the "basic enemy" of all the other areas are going to be.

There might be some other classes with weird or unusual combinations of starting stats but everything else aside from luck one was present in more or less every souls game in different forms.
