Report a translation problem
Started to make a new character and went back to my current one just to test the lines out, and realised it was Young 1 even though I was pretty certain I picked Mature 1, switched it back, tested the line and sure enough, it was the exact same voice...so this would make sense as to way every single male I've come across near enough always sounds like my voice, and I'm assuming it's a bug that's tied it to your age and then runs the default for that.
Definitely would be worth submitting this as a ticket to From Soft to make sure they're aware of the issue because...don't really want every character to sound the same yah know xD
(Edit: Okay turns out that it appears to just be a visual bug, just went through quite a bunch of the voice lines and it had indeed changed, went back and it was again Young 1, even though I did sound different, regardless be worth it to make sure you got it set to the right voice each time you edit your character just to be safe)
