How much endurance in your build please ?
btw i suggested the pike beacause it's the only spear that scales with strenght and can be infused
If she's on your mimic tear, you can possible land consecutive 2H R2 leap attacks on her in a row, and stance break her pretty fast, and go for the finisher (swap to a miseracorde for the finisher, does more damage).
Also, you can power stance 2 greatswords (colossal one), put frost infusion on both of them, and press her with Royal Knight's Resolve buffed power stance leap attacks, and get frostbite damage in as well.
My recommendation would be to solo her first phase, then use your mimic tear on the 2nd phase (she's got way less openings in phase 2 for big weapons). Then slam her with leap attacks when she's on your mimic tear.
I beat her in NG+ using power stanced giant crushers with frost infusion.
