Essentially, shields will only block a percentage of incoming status effects. Even if you block an attack, you'll get a little bit of status buildup. To lower the amount of incoming status buildup, focus your build on the specific attributes that govern resistance to the status effect you're trying to block.
Note: you'll never reach 100% immunity to any status. Nothing in the game allows for that. You CAN, however, get really strong resistance with a specialised build and usage of status-resistance items.

Man, imagine if weapons you picked up from an enemy did as much status as when they hit YOU with it. Then ♥♥♥♥ would be really ♥♥♥♥♥♥♥ wild regardless of what anti status talismans are stuffed in your pants.
