His right side, your left, he will attack freely on. If you end up on this side due to being unable to get on the better side during an exchange you can definitely still attack just be careful and do not spam more than one attack at a time. Attack then wait, then attack if he doesn't appear to be doing the body slam. The issue with this side, aside from dodging the weapon, is the boss will sometimes body slam you. Fortunately, it does very poor damage even at SL1 and knocks you back so the odds of it killing you unless you failed to heal is low and thus punishment for being greedy actually isn't that high.
You an also just hit him with ranged magic/weapon arts if you want.
After you do enough damage that the horse dies he will fall to the ground. You can critical stab him in the stomach while he is on the ground at this point for some nice damage. If you stay near him he will fight as melee on ground and I've never seen him resummon while you stay in range. If you get back at this point he may resummon the horse. Just continue business as usual in that case.
Boss is vunlerable to bleed. It's what I use for my SL1 +0 weapon run so bleed is definitely viable. The bloodly slash weapon art might do really good damage if you dodge and use it with a leveled character, at least that was my impression on the first one near the dragon in Limgrave. I can't totally confirm since mine doesn't scale well for obvious reasons but it might be a good option to nuke the boss.
I find the boss very easy on foot. I don't fight any bosses on horse but it may or may not be easier on horse so that is something to also consider.
