i never bring out the big guns in pvp but fighting against people who do, they perform best when they understand they have hyper armour and basically everyone else doesn't, but yeah trading against bleedbuilds seems like a gamble

Yeah, stun lock is good until this happens. Then you feel stupidly stupid.
Add in basically "free" bleeds for many weapons (as in the stats are on par with non-bleed weapons, but they get it anyway) and it can't really compete.
You can have a giant sword/hammer and hit for X damage in Y time. Or you can have two katanas and hit for X/2 3-4 times in Y time and also probably proc bleed which is worth 3 or 4X. Also you can swing for X/2 many times when Strength can't swing at all.
Strength has Jumping Attacks imo. Guard Counters don't work for most bosses (again the issue of no time to do them). Poise damage is... questionable. It feels like most enemies are "can be staggered" or "can't be staggered" and if they're in the first camp, a katana staggers them just about as well as a Greatsword.
Even if bleed vanished from the game, I think Dex weapons would just be better because of how most boss fights are set up right now. Tiny windows of attack and the need to recover and be ready to avoid again favors fast weapons that can hit once or twice and withdraw while still having a healthy stamina pool and not being locked into an animation.
(PVE that is, in PVP I have no real idea)
Edit: And Quality is basically pointless. With as high as the caps are, you're almost always better taking the better scaling stat to 60 (or even 80) and calling it a day from what I've seen from number-crunchers.
You are on point. That is how I feel too. I enjoyed strength build in DS games. In Elden Ring, strength build is challenging to play as you have pointed out.
I didn't call it trash, I just said it is the weakest build compare to bleed and magic. You are easily trigger aren't you? Did I hurt your feelings?
