The Fire Giant isn't really difficult, so I can agree with you on that one.
As for Astel, most of his attacks consists of AoE-spamming, Laser-Sniping and cheap one-shot grabs. If you're playing Melee, you're going to have a bad time.
My own first encounter with Astel, beyond the lake of Rot, I had to beat the fellow on level 50-60 with hookclaws. Couldn't swap my loadout around either due to no Grace site in the area. Solo against the boss, since using Ashes-Summons were ineffective.
It's true that I could probably have prepared myself more for the fight by coming back later on, but in a blind playthrough while trying to complete a specific questline, this endeavor was living hell for me.
But I did it!
I wonder if casters or ranged builds have any better luck on that fight.
I still gotta say.. soemtimes.. lock on does more harm than good. Releasing it can help against big, fast bosses.

Astel is a real bully if you're still low-level and unprepared, is all.
I myself used the pre-nerf night and flame.
Pretty sure he's resistant to magic, though... so I dunno. Glad you managed, though, fam. With such a difficulty gap, too! Kudos.
I have more trouble without lock on, to be real.
I do un-lock in certain situations where I need to regain my position against a large foe, or temporarily attack a certain part without any camera lock. Not often, though.
Can't say for certain if this has ever affected me, but I don't think it has. I enjoy the imposing and threatening appearance, it excites me. The delays do get me a lot, though.
Don't get me wrong. I love Astel's disturbing appearance, and you're right he's more akin to a bloodborne boss. I just don't like his grabs.
Everything else was a matter of 'i'm bad so i got hit'. All of them fair, all of them my fault.
