Why would you not use any summon, that was purposefully put into game to help solo players, to fight very tough enemy duo is beyond my understanding.
Another issue with your advice is reliance on parry. Some people can parry, some can not. Trying to do this on a boss fight where repercussion of failing to parry can be lost of 1/4 or even 1/3 of your health are significant.
I cleared this fight after yesterday's patch when Mimic was nerfed but it still worked perfectly well to distract one knight while I dealt with the other one. I had 3 tries without summon just to see how these guys do but it was not really working. I could not separate them enough from each other to have any serious opening for attacks. Stamina was my main issue since due to heavy dodging and blocking I had very little left for attacks and I often got guard broken due running out of stamina on block. Using Mimic made the fight manageable and fun again.

ER is not balanced for soloing bosses, i mean you can, but it's waste of time since game doesn't care about the player.
After he is out its a fair fight.
Godskin duo is a joke compared to that. Even tho I gotta say.. I got the fingerprint stone shield shortly after that fight.. tried one ck again somewhere else. Oh boy. That shield is nuts.
