Don't think it's a big deal, but ye, they might have used more un-generic encounters or more modifications to the copy+paste versions.
What would have been cool would have been some bosses having regular back-up dudes or modified movesets if just slightly. So far they went for the "same enemy in green and with a new elemental resistance" thing.
More hand-crafted encounters for these would be nice. But I understand they also had to save time somewhere. The legacy dungeons were nice and clearly got the most effort. A smaller map with more focus on them would have been fine.
Optional or Minor bosses copy paste maybe i can stand it, but Major Bosses copy-paste are just sad. Godfrey yellow and Real Godfrey, Margit-optional margit, morgit which is margit but now the real one, Mohg the no phase 2 and Mohg who have phase 2, Commander Nial and O Neil, Briar and that bell hunter, astel with different titles, etc
The feelings after beating bosses aren't the same anymore, because you will meet them again in later places of the game
On Steam it's sitting at 87% which isn't that good for a so-called masterpiece.
I won't defend the copy/paste ganks though.
