I was level 152 I believe. Couldve probably done it without much problems 50 levels lower.
haven't done any grinding but i have done every single piece of side content (used the wiki to find anything i missed)
bosses are easy and enemy's 2 shot kill me and are hit sponges, i need to re spec my build cus i just been throwing stats all over the place

As long as you have enough HP, you should be able to beat the game easily enough. I don't believe you even get that much damage from levelling, honestly. I tried going with high damage stats on one character, but had an easier time just running minimum stats to two hand my weapon and full Vigor.
150 is reasonable stopping point for a hybrid build. 200 allows you to pump 2 scaling stats very high, and without being short on VIG, END, MND.
There are soft caps on a lot of stats, I think it's 55 for STR and DEX, you get increases beyond that, just not quite as much. Int for example can get good gains all the way up to about the 80 mark, depending on the catalyst you're using. So, a full mage probably wants 80 INT with carian regal scepter, or azur's.
At some point with str/dex scaling stats, you're better off getting 25 in FTH to cast Golden Vow vs putting 15-20 more points in str/dex. It stacks with flame grant me strength, and black flame's protection (for extra phys resists). You can get up to 60s range in phys resist by buff stacking, and that honestly helps a lot with mitigating damage, and/or buff a specific element resist to as high as 70s with buffs/physique potion. Getting 70%ish holy resist helps a lot with radagan the undodgeable and elden beast.
No such thing in this game. Some bosses have a pretty low downtime between certain attacks.
That's also because bosses hit for 700-2000. So unless you are rocking 5k HP (somehow) you're still going to get rocked in a couple hits.
One strategy I learned to adopt in this game in some boss fights is to take damage in order to save time so I can press harder on offense just to end the fight quicker. It's an intentional, conscious choice to take the hit in order to give one. For example, point blank with a laser beam sword weapon art does an atrocious amount of damage (like 5k+ even), if you lose 1/3rd of your HP bar for it, it's worth the trade, that's what health pots are for. Getting greedy with bleed builds also pays off, I typically stack appropriate defense buffs when I do this (usually physical), so Black Flame's protection + Golden Vow + Dragoncrest Greatshield talisman.
