Can you roll catch in PvP with Katanas?
Pvp'd quite a bit. Feeling like rolling is safer ER than it is in Souls.

Fought with different builds against different builds. Think great lance can catch a panic roll with good timing. But I've tried and tried with katana and no luck.

On offence: there are plenty of Moonveils around. Rolling into the opponent's missed Arts will usually result in their panic roll. I've tried delayed R1s, rolling attacks, running, jumping, all with minor difference in timing, and if they are determined to roll spam. They can get away.

Only catch I ever make was if they try to roll and initiate a rolling attack as a counter, in which they would land in my active attack frames and take a hit.

On defence: if I want to turtle, I watch for their attacks/spells and roll. Most hits in Pvp feel like they are very reactable. There were very few instances where I try to play chicken and would get caught.

Fights still end one way or the other mostly cause of mistimed attacks, bad range, trade. But almost never from a roll punish.

I hope my conclusions are wrong. Any other avid Pvp'ers with insight into the topic?

Halberds are pretty good for catching folks at the end of their rolls. Sweeping attack with long range. If they know what they are doing they will roll into the attack though.

For some reason bleed still applies if you hit somebody mid-roll. Doesn't always happen, not sure exactly what's going on there.
I roll catch with halberd literally all the time. Not katana though, but I imagine two-handed running R2 is similar.

Powerstanced halberds are amazingly low effort for this. It's great fun.

Haha, I'll bet. I haven't even used halberds yet, just got tagged several times by an invader before I had an 'aha' moment.

Can also jump attack over some of the sweeping attacks, but its riskier than rolling into them.

Oh yeah, I think all statuses go through regardless of hit or not in many cases, which makes statuses like madness very dangerous.

I am a classical halberd enjoyer so I can easily with bias recommend at least trying it out. Albeit its attack recovery feels slow compared to many other weapons it's still quite satisfying, especially when you're trained to use your positioning to always hit with the blade. Running R1's are what I use to catch invaders and it's quite a safe and quick move in general, especially with the reach of the halberd.

I haven't been jumped like that yet but I'll definitely be weary!

Tested some other weapons too. Can catch rolls with bloodhound step Claws/Daggers. The Art dash distance is big enough that if you only pressure with one attack to conserve stamina, you can be constantly on top of your target with the correct spacing. Too close the bloodhound step will go diagonal. Too far obviously means out of range.

Still no luck katanas.

With some weapons, sure. But Katana looks like it covers enough angle that this shouldn't be a problem.

You can replicate the test I did with a buddy too. Have them spam roll into you and you attack back with R1/variations + different timing. Locked on or not. Let me know if you can get a hit in.

Someone else mentioned the katana 1-handed charge attack might work. Will try that next.

This works for any attack with tracking: Start an attack when they roll, and lock on right before your swing. If you get the timing right, it should land right where they are coming out of the roll.

I get a lot of mileage out of jumping R2s with this method. Can also do it manually, takes a little practice.
