Is 60 vigor too much?
Do you consider this cheesing? I feel invincible with this much vigor.

normally I'd say 40 is what you need in a souls game, but honestly I'm starting to feel like maybe they made the 2nd soft-cap 80 because you should be getting 80 vigour. At 40 at least most enemies 2 shot me, and a lot of bosses have a 1 shot move.

Nah, with how cheesy some bosses and enemies are, you need all the advantage you can get honestly.

Softcaps for VIG are 40/60
Not really unless you're at NG+, it's a Welcome

Not really no. Don't think I would go above that depending on your slevel. Weapon arts are so nuts it really seems to devalue hard points into stats such as dex/str etc... just meet the min requirement then go ham on health, end, mind whatever. Wayy diff from a classic dark souls way for sure.

soft caps for vigor are at 40 and once again at 60. same for mind and endurance. for damaging attributes it caps out at 80.

Most melee end builds have 60 vigor and 80 in their main damaging attribute. Spellcasters can obviously use less vigor and endurance, because they need more mind.

That said, as a melee dude, at 50 vigor and sub-heavy gear I feel practically immortal. Was planning to go to 60, but will do that at some of the New Game+++'s.
