That's because you're not suppose to dodge and if you are you are playing the game completely wrong. You're suppose to deflect, which if you get good at the game becomes the easiest FromSoft game of all time.
It teaches you that you cant just attack everything you see and that you always have to be carefull about traps in any dungeon.
I went there a lot later at about level 50 and +8/+10 weapon(unique +4) and was curious which Boss they would put in there.
Fallingstar Beast is one hell of a boss and it took me 1h to finally defeat it @ level50 with like +4 Bloodhound Fang.
Its one of the best bosses in Elden Ring to be honest.
Tons of different attacks but pretty fair telegraphs.
Still very difficult in melee since its just so damn many moves you have to learn
there is almost no way anyone who has like +1 weapon can defeat it at all.
The boss is absolutely brutal and fighting it reminded me a lot about fighting Gael for some reason.
I can only applaud Froomsoftware for that whole idea.
People in the first 30 minutes of the game can be teleported to a Midgame Area when they are not careful.
The Area itself is very doable and not so hard if you just use a mixture of sneak and run.
Its almost impossible if you do fight stuff (noticed the monsters in that tunnel are super weak to fire so a Starter Faith Build can make it to the boss fighting).
But if for some reason a player didnt learn his lession in the tunnel and still wants to fight the boss -> they make sure you get your lession there.
Unless you can lvl1 no upgrade Gael in DS3 there is no chance you defeat that boss with
starting items and no upgrades.
One would think that after that experience people will finally get that you are not meant to fight in that area when you get there early

By the 3rd time I rolled my eyes. That ♥♥♥♥ got old quick.
One of my best feelings was going back there after leveling up and wiping that ♥♥♥♥♥♥♥ place out though. I think those dudes with the homing webs or whatever are the worst designed enemy.
Use a unupgraded mace or any other weapon with the "strike" damage type and you will melt the miners within one - three hits. They are just highly resistant to the other attributes associated with weapons. I can't speak to their magic resists if you are a mage.
The centipedes needle attack can be blocked with a shield or dodged, and once you are up close you just need to break their posture, which again with a mace, is achievable with one charged R2 or 1-2 jumping attacks.
It's a trap, you got caught and sendt to the slave mines to mine glintstone, your goal is to escape the mines. If you can't fight them then stealth out and come back later when you are more powerfull.
