I'm only at the Altus Plateau myself, and so far have fought 1 dragon in Limgrave, 2 dragons in Liurnia (though one disappeared after I almost killed it but I died instead), 1 in Altus Plateau, 2 in Caelid (one north, one south) as well as the "super large" dragon in the north and not counting the little ones. Plus at least three dragon lizards I have seen.
So 5 variants on the "Agheel type" dragon I have fought so far, 1 unique variant (the Altus Plateau one), 3 fire lizard variants, and then the gimmick large dragon in Caelid.
That brings it to 10, depending on how you count them.
According to the wiki there's about 15 in total, which matches my experience so far.
Glintstone Dragon Smarag
Decaying Ekzykes
Flying Dragon Greyll
Elder Dragon Greyoll
Glintstone Dragon Adula
Borealis the Freezing Bog
Ancient Dragon Lansseax
Lichdragon Fortissax
Great Wyrm Theodorix
Magma Wyrm
Magma Wyrm
Magma Wyrm
Magma Wyrm Makar
like a dozen nameless minor dragons in Caelid
3 nameless minor dragons at Moonlight Altar
You are missing the giant magma dragon that unlocks the advanced version of magma breath.
That's Great Wyrm Theodorix.
I was missing Dragonlord Placidusax though.
