I could have sworn there was a hide helmet toggle in this game that I was ignoring.

There is not.

I also play without helmet.

There are helmets that don't hide your face, and some that are very minimal (like a thin headband).

Seems silly to "hide" gear if you're wearing it (outside of Hidden Weapon magic, that makes sense)

This would be a cool feature, Nioh has it.

I usually spend hours, sometimes days, refining my character's appearance before I play. To then have that discarded is disrespectful.

I mean, if you put on paper, the difference in defense with or without helmet is minimal. So simply do not use one.

I just play without helmets in most of my characters and it makes little to no difference unless you rely on a helmet's extra effect. So I don't think it's a crippling lack of, but I do would appreciate something like in D3 where you can warp the looks of every piece of gear you wear and also make them invisible, but if not all at least something so you personally don't see the helmet would be really appreciated.

I was never sure why we even have appearance customization in most Souls games.
90% of the time we do not see the head, let alone the face of our character because of the helm.
In the next game DEVs could save time and resource here by just making few non-customizable looks and be done with that.

Some builds require a certain Helm so you must be really unlucky if you to play that build.

Just don't wear a helmet my dude, I promise you you will still get 2 shot by most enemies, I wear helmets maybe once in a blue moon if I'm try harding my ass off to a boss, but it really makes no difference because ultimately I take them off for something else, forget and then defeat the boss I was struggling with anyways without the helmet, unless you're wearing various defense talismans and going with a tank build + defensive buffs I promise it ain't much of a difference if any.

I play a bleed build without the white mask to provide an example, I am fully aware it would be a decent damage boost, but play without it anyways and I don't think I regret it specially due to being better at the game, so in general rely is a strong word, they help but they are never "essential", I 100% think fashion souls is always the right choice

Sure.
But who can actually see the face? Only a very few cutscenes.
In PvP characters are red, blue or white/yellow.
We cannot even see the proper colour of the characters. Or is there a way to see the normal colour?
And when we are in the middle of the combat, nobody is looking at the face while trying to survive or end the opponent.

I've played the game multiple times and gotten all shardbearers and done proper exploration and I do see my face plenty, every dialogue is an opportunity to move your camera around in a controller and see the perspectives, so yes, I do think you see it plenty enough to justify it and you can put a helmet if try harding.
