Also the enemies there are probably super resistant to the fire damage in particular, also the magma wyrm is strong vs slashing, weak to strike
Also, new players don't know where the smithing stones are so I bet the weapons being used are underleveled. Mid-game is supposed a cake walk, most players will have already beat Godrick and Rennala before reaching volcano manor

weapon upgrades are the main part of your damage, so it's kind of a big deal.
In the future, this is what you do in souls games to make it easier on yourself. Level vigor or the HP stat until you aren't being 1-shot anymore. 34 Vigor isn't even the first softcap where HP gains slows down, you should be at 40 minimum, but not higher than 60. Next, think about the weapons you want to use, and look up their requirements. If you don't meet the requirements the damage is heavily nerfed. You can get away with strength requirements by two-handing your weapon, which doubles your strength stat. Start leveling your weapons until you meet the requirements. From here, upgrade your weapons and use stones.
Now that you have that out of the way, when you can't level your weapon anymore, that's when you can put points into the damage stats. Look at the weapon you're using again. If a weapon has a high letter grade, let's say A for strength and D for dexterity, that's when you put lots of strength into your weapon. The first softcap is 50 and the second is 80, so people usually stop putting points into them at these points.
Endurance gives you stamina and that's previously been important but Elden Ring is pretty generous so you'll only need enough to give you an equip load to do a mid-roll with your armor and weapons. Mind has the opposite of a softcap, it only gets good the more points you put into it. At 20 you aren't getting the bonuses you need. It's a stat almost exclusively for mages. I would level only one of these in general.
Don't put points into anything else you aren't using.
What PVP players do is they purposely pick the class that gives them the lowest in the stats they know they won't level up in, that way when they match with people the same level, they aren't wasting points in thats that don't help them
Also ailment might work well too (poison, scarlet rot etc.) to help your combat.
