Should I run quickstep if I'm going shieldless?
Or is the dodge roll good enough in most situations?

Dodge roll is fine. Quickstep is pointless anyway, Bloodhound's Step exists and is vastly better.

I mean, use both if you want the extra dodge options. Regular dodge is free after all.

AFAIK quickstep starts it's iFrames faster and lasts longer than roll at the expense of FP cost, it also has faster recovery for attacking, however when you lose your FP it becomes bad though as you lose iFrames completely.

Also it uses much less Stamina.

Quickstepping is technically better until you lose all your FP.

(this is how it worked in DS3)

However Bloodhound step exists and needs to be tested thoroughly for iFrames
