I went with Confessor. And at level 90 now, I’ve respec twice, and now am more of a hybrid mage/greatsword. And I’m very happy with it. Even changed my character from male to female because of the Armor set I created. I was having a hard time finding that setup that made me feel like my skills matched my armor. The armors honestly could use some work. They are cool in their own right, but compared to dark souls 3, they feel a bit weird. I never found that special one that made me content on not having to seek out another. Nothing mid game made me feel like the dark leggings and undead legion chest combo in dark souls 3 did.
Then I came across the noble set and went and got the crimson hood for it. Threw on the royal remains leggings and gauntlets and it look awesome with the blasphemous blade/staff combo.
For me, it’s all about aesthetics.
Elden ring has too many funny, big, over the top helmets for me. People seem to like them but I’m more of a traditional person when it comes to armor. I want my mage looking like a mage, and my knight looking like a knight.
Best bet is to look through the spell lists of faith users vs int users and decide which field you'd rather dive in.
Both faith and int have their appeal depending on how you like to play. Confessor for hybrid faith, prisoner for hybrid int.
Both have low cost and high cost options.
You are best to go watch a spell show case and see which you like the look of most.
I wanted to weave spells in with sword play, but sorcery is a bit slow for that, so I use it more as a long range bombardment option mostly.
As it stands, I am enjoying the character, I just need to make some distance to throw out a spell or two, with 12 slots now, I can realistically run a good selection of both if I drop my high end nukes that need 2 and 3 slots each :)
But, again, do you want to fire off quick spells at close range and buff? Go faith, if you want to sit back and nuke stuff, Int is a better approach from what I have seen.
At least until about 1/3 through the game when you get ahold of the Godskin spells and the talisman for them, at which point Faith builds become hilarious.
so . i think it doesn't matter how you begin the adventure ... later you can respecc and you have so many points to set ...
i think this starting chars are simply put in the game to make it look more interesting for new players.

i cannot say which is best for you, just know you can respec back to your starting stats (not change your class) after you complete the second main boss, due to exploring far and wide, i didn't kill them until the 90 hour mark lol
You need to use a staff / focus, I use it in the left hand occasionally swapping it over for a shield, weapon in my right hand.
If you have the carry limit, you can wear what ever you want, I'm in medium armour to maitain the medium roll.
