Maliketh being a personal favorite, it was just really chilling and tragic, which is fitting considering his backstory and questline.
And then theres the Malenia and Radagon themes that really give this air that you're fighting a god, one being more of an elegant note while the other going for something epic.
Other than that, probably the remixed title theme for Radagon. It's all very hollywood and 'epic', so I agree that some of the other tracks come across as mildly generic sometimes.
Godskin Apostles theme feels a bit overrated to me, but I get why people like it.
Godrick, Margit, Radahn, Fallingstar Beast, Fortissax, Godskin, Renalla, The First Elden Lord, Erdtree Knights, Fire Giant, Beast Clergyman, Omen King, Lord of Blood, Regal Ancestor Spirit, Dragonlord Placidusax, Malenia, Blade of Miquella and The Final Battle are all fantastically composed and are jam packed with details that might not be immediately noticeable on a single listening session.
The most immediately exciting boss music has to be Godrick and Godskin for me. They just go so hard and they never let my jaw come up off of the floor after hearing them.
Might sound pretentious, but really sit down and give the boss themes a good few focused listens. They might grow on you. :)

You also have to remember that the best tracks usually in the DLCs, which ER has none at the moment. A lot of people list themes like Gael's, Friede's, Ludwig's, Maria's, or even Sir Alonne as example of earlier games having better soundtracks, but again, it's not a fair comparison to include the better DLC tracks before we hear ER's.
Which is crap, but still better than ds2 and ds3, where I literally can't remember a single track. it was super forgettable.
I think ds1 is the only fromsoft game that actually had great ost.
I heard an Eh its okay song in the beginning and 80 hours later only to find to find the 6-7/10 songs at late game where they bombard you with their main boss galleries. The experience is a bit exaggerated but that's pretty much the nutshell version where I'm practically begging for the game to bring be me back to awesome fights where I'm jamming to awesome music memories that I had of the previous games and had to wait until Late game until I had to hear good music finally(Godfrey,etc).
For the soundtrack in this game, they bit more than they can chew.
Compare that to Dark souls 3 where bosses are spread out more evenly and solid music.
Also disagree about the DLC having the best. Well it's true BUT the vanilla soundtracks of Bloodborne/Dark souls 3 easily stomps Elden ring.

Totally right, with more content "DLC" Elden Ring will get a bigger music "pool". After all as you said Ludwig and like i said before Laurence the last vicar themes are DLC content.
But remember Yuka Kitamura made EVERYTHING since Dark Souls to Elden Ring. So the same extremly talented mastermind together with other artists is behind all the soundtracks.
Expect only quality.
