In the old games there was a specific lore reason, and while I haven't personally gotten far enough to uncover the lore for death in Elden Ring, I'd wager it's very similar.
In the souls series it was because: "Basically, undeath is a curse that was created by Gwyn, Lord of Cinder, and causes the victim to continually come back to life when they die. To put it simply, the enemies come back to life because they are undead."
If your having issues with FP, you should invest more points into mind, get more FP flasks, and be more conservative with your FP use. It's hard to be a full mage at the beginning of the game. Find a good melee weapon or bow to take out weaker enemies. There are also talismens that help with FP consumption, though most of those are later in the game.
