The key to most of these bosses is to primarily fight them on foot and if they have a huge AOE/firebreath attack you quickly summon your horse to get out of the range.
All of those bosses are a cakewalk on foot because on horse back you have to preemptively know when they are going to attack since you have no iframes/dodging on your horse.

It does actually lol.
Probably didn't help that I was there fairly early as a hybrid build and didn't even have a proper int weapon, I'm a good 100+ levels higher now though with proper stats for melee and spells :)
