Make sure to get Godrik's Rune (within Stormviel Castle) and Radagon's Soreseal.

The biggest advantage to colossal weapons is the stagger. You can even stagger bosses regularly. Guard counters are also very powerful, especially with enemies deflecting off your greatshield. It really turns the game into easy mode.
I can't answer most of your questions, as I'm playing mostly blind. I'm using the grafted greatsword or the the dragon greatclaw. The dragon greatclaw deals great damage and is lighter than the grafted greatsword.
I keep my claymore as a backup when I need a faster weapon. DPS wise they're about the same, with the claymore hitting more often but the greatswords stunning or staggering most enemies.

Others can probably advise better on the great sword and weapon art aspect of things.
On the last one for farming souls, you can get away with the small humanoids at the Beastial Sanctum. They're all the way east from Limwall.
If you have not yet been there before, then I'll describe it from the Gatefront / Gatefront Ruins where you might have met Melina when you unlocked the leveling up / Torrent the steed.
Follow the road east. Cross the bridge, preferably not at night due to the Night Cavalry. Just after the bridge, head north in the road as it takes you down the slope. Head under the giant pass with the demi-humans with the attacked cart below and keep going until you find the Third Church of Marika.
From the Grace in the church, head northeast, just over a few boulders and down into the water with the glowing portal. Take that portal, go inside the building behind you for a quick save. Then head about south-ish toward the bridge to save again.
Target the mobs on your west and to the north for about 1k a kill. They stagger fairly easily and as long as you get the first attack, you'll probably be able to keep them staggered until death. Be careful, as they hit pretty hard.
That's why I was using the big guns, but even with my berserk's sword in +5 my buddy use that curved greatsword from DS3 and procs bleeds and staggers way to quick, I can't even compete... He barely has stats on STR and DEX beyond the minimum requirements and doesn't know how to upgrade them. Why is that so much better than the colossal weapons?

Personally I would also say ditch the shield and learn to dodge, but if you already have a build you want then go for it.

Using the Great Star +14, modified with Heavy Barbaric Roar for a B in strength scaling.
Golden Greatshield, no skill
Imp Head (Wolf), Banished Knight Armor (Altered), Redmane Knight Gauntlets, and Lionel's Greaves. Also have the Arsenal Charm and Blessed Dew Talisman.
This build allows me to medium roll and passively regen HP, as well as regen 2% max HP on it, stagger moooost enemies in a few hits, and apply 55 bleed stacks on hit.
Dealing 366 strike damage on hit, with the option to bull damage using my weapon skill, and only suffering marginal stamina damage on blocking with good elemental reduction as well.
You could also swap in the Icon Shield, which is a greatshield that has pretty good stability but less resistance, to passively heal even more.

It's almost mandatory for ultra light glass cannons who are always a oneshot anyway but a fat-roller might find themselves in some sweaty fights later in the game with it equipped.
Not saying it's bad advice, just that soreseal on a heavy load build comes with a pretty big warning label.
