Probably because there isn't an option to remove just the useless ones.
However, on Elden Ring, I don't really know why you would want to remove signs and stay online seeing as PVP only happens through summoning or co-oping. Perhaps it's the reasons above and doesn't want ambushes and traps spoiled. Or perhaps, he doesn't want to read the messages but wants the chance to have his messages positively rated for the health boost.
Even in Elden Ring, I can think of a few use cases where one could want messages turned off. I'd support the option as it really doesn't influence anyone else's game if the host turns off his own ability to view messages. However, I'd prefer they fix invisible enemies first before focusing on quality of life changes.
Yeah, you should be able to use the left and right arrow keys to switch between options in that situation. I'm not sure what the controller buttons are.
