To GANK is to unfairly engage in PvP. It is a term that, while not originating from WoW, was popularize it. It was widespread in PvP servers, characterized by attacking someone that's busy with Mobs, being a level 60 attacking level 20 noobs in Tarren Mill, or (yes) jumping someone with greater numbers. A GANKER is always the initiator.
If you look up 'Gank Build', you'll find high burst damage assassin builds for ESO, Guild Wars, and every other MMO. Being "ganked" is also a term utilized in League of Legends, say when another jungler gets the drop on your own while he's busy, or roaming to another lane.
Gank has never exclusively meant "Gang Kill" as the souls community currently seems to mistake it for. Dickwraiths (Dark Souls 1) were constantly called dirty gankers because of the unfair advantage they had over the Hosts.
Given the Host (and Cooperators) are not the ones initiating the PvP, nor Jumping you unprepared, they are by definition NOT ganking...
...except on occasion. You know the type, that clear the map and wait for invaders.

Even if we ignore that the term itself is loosely defined and not fully encompassed by a dictionary "definition". Pretty much every invasion in a Souls game is a 'gank'. A 1v1 can absolutely be a disadvantageous fight, especially for the invadee.
If you like that style of PvP it's fine. But don't pretend that most invasions are against people who want it.
I had to mow through five invaders before beating Stormveil, just because I dared to want to have some fun with friends in a game that is.. what? 98% PvE? Because there's no restriction on invader item usage (you can use it right after a successful invasion), and no invasion protection after killing or dying to an invader - so it continues non stop, shutting down all progress.
Nevermind there's an Arena, a Duel Sign, and the eventual Dueling Clubs that are going to show up like every other Souls-like. But that's not where people complain, is it? For some reason, it's always 'invasions' that people complain about. As if the Invaders aren't looking for a proper, fair duel...

People's personal definitions don't matter though, I can agree.
At least in the overwhelming majority of other games PvP and ganking is an opt-in experience.
The trials and tribulations of pissing off a Rogue in vanilla WoW. That's ganking. So is Souls.
But language, especially in our modern day means next to nothing. Definitions change faster than pronouns.
It was one of the few games with a more toxic pvp system than the Soulsborne games. It was really only fun for me at the time because I was a terrible person who did terrible things and thought it was funny. I like to think I outgrew that, and probably wouldn't enjoy the murderous freedom of UO.
