only way i can even think of killing him on foot is to do the church range spam
Then when you fight him, keep your distance and wait for him to do a big charge swipe. When he does this, roll backwards and to the right. If you time it right, you'll dodge the hit and roll in the direction he ends up going past you. close the distance and get a couple hits in, fight him upclose as long as you're comfortable then back off and repeat.
Don't want/ can't use partisan = farm fire grease, burn the horses to death since weapon enchantment on early level give you significant damage increase

While the Tree Champion is defeatable then, progressing the game a little bit more (and I mean a little bit) can offer you several tools to take on that opponent a little more comfortably IF you decide to.
The Tree Champion is a trap set by the developers to taste a player's pride / desire to avenge themselves. And some players do not feel comfortable exploring, at all, until they deal with the enemy presented to them. Can do it for the challenge though.
