Any tips?
I can get him to about half before he starts spamming a shield slam that has a large aoe and one shots me.
Also, how do I avoid the body check?
That slam seems to track my ass wherever I run/dodge.

One word: Torrentera.
After you get the horse, it will be soooo easy

I used my horse to beat him and stay on the shield side it's easier to dodge with a dash this way

Either run in and get a swipe then run out with Torrent. Or just roll in time to dodge the attacks with the i-frames and don't get greedy with your hits.

don't fight him untill later. wait till a little after you have torrent clear some of the cave and dungeon bosses around the areas then confront him. remember this is a open world game the first boss you see is not necessarily meant to be the first boss of the game. (hello tales of series/xenoblade.)

I'll keep trying, just need to figure out the range of that shield slam.

you need to jump over it which is why everyone telling you to get the horse since his double jump makes the attack avoidable. there are a lot of bosses that you need to use the z axis for in this game. tree sentinel is there to teach you that.
only way i can even think of killing him on foot is to do the church range spam

I literally killed him way after, literally after killing three shardbearers

Run past him to the little building and just follow the guide thing until you can level up. Play and explore a bit more until you level vigor/get armor and don't die in one.

Then when you fight him, keep your distance and wait for him to do a big charge swipe. When he does this, roll backwards and to the right. If you time it right, you'll dodge the hit and roll in the direction he ends up going past you. close the distance and get a couple hits in, fight him upclose as long as you're comfortable then back off and repeat.

no horse = progress a bit further (place where you can lvl up) then kill nearby soldier for partisan -> use double partisan -> skewer tree sentinel to death
Don't want/ can't use partisan = farm fire grease, burn the horses to death since weapon enchantment on early level give you significant damage increase

You literally get your house 30 mins into the game. You're just wasting time and over exerting yourself.

First NPC literally says you don't have to fight him first. I'd follow that advice.

In this case, it sounds like you're facing him almost immediately after coming to the surface.

While the Tree Champion is defeatable then, progressing the game a little bit more (and I mean a little bit) can offer you several tools to take on that opponent a little more comfortably IF you decide to.

The Tree Champion is a trap set by the developers to taste a player's pride / desire to avenge themselves. And some players do not feel comfortable exploring, at all, until they deal with the enemy presented to them. Can do it for the challenge though.

To be fair, this would be the second boss I've run into I'm not supposed to fight, I'm like 30-40 minutes into the game right now.
it doesn't feel right leaving a boss unkilled lol
