Make sure that once he starts using his shield to attack to keep in mind that the game tries to trick you with the shield slam. You have to roll later than you normally would to not get hit by the AOE. And I guess the only other dangerous attack that is hard to dodge is the horse side tackle.
Either try it till you are comfortable to dodge his attacks (i recommend doing that on a flat surface with lots of space) or come back later with the horse or if you are more lvled.
Night Cavalry is easier unmounted.
Well with technical issues it might be up to impossible depending on how bad they are, sorry.
I died a few times on the horse. Unmounted and used my greatsword used my special attack which unmounted his horse. I backstabbed him 4 times. It's a curved gs that does a dancer style attack.
