For example my monitor can separately remember what aspect ratio to use per resolution, doesn't matter if the game does it's own scaling.
I override it and nothing happened. I still get the same result. 2560 x 1600 is 16:10 not 16:9.
I did exactly what you have done on the nvidia controls. Nothing changed. It's still showing a 16:9 on a 16:10 resolution.
Games have actually been doing this since at least Beyond Good and Evil in 2003 (first time I remember enforced aspect ratio).
Edit your first reply, and delete the other 2.
Anyway, if the game forces 16:9 aspect ratio with black bars, then you can't do anything. That's what you get.
If you get 16:10 with 2560x1440, without black bars and the image is stretched, then you're forcing 16:10 to a 16:9 res through your monitor, the game doesn't have 16:10 without black bars.
If it's not stretched, then it's cutting the left and right sides.
2560x1440 16:9 on a 16:10 monitor should have by default black bars above and below, if you haven't, then you're stretching the image.
Simply said:

The game renders only for 16:9, if you use any other resolution you get black bars, end of story.
If you don't want black bars, then stretch the image to fullscreen you can do it in the monitor or in the gpu control panel, if you like stretched image. Or get a 16:9 monitor. Or pay the developers to change their internal rendering.

sorry for the late response, didnt notice your question, i have a legion 7, first time i started the game it seemed that it respected the 16:10 aspect ratio, and the next day was gone, and if i change the resolution to 1440p then it stretch the image to 16:10....doesnt make any sense at all.
I had the same thing it was weird. I guess it had to do something with their update. I guess we are forced to play with the 16:9.
