Know your moveset, know the enemy moveset, find out the best time to act, give soace, when you have an opening, etc
Also: Use strong attacks to break the enemie's guard!
I'm not the most skilled player ever (gave up on Sekiro because of its difficulty) and I'm doing more than fine.
Though, I am far from the greatest at these games, so it probably is a little to do with me too lol
Well to be fair: The boss you're talking about is really a little above their normal difficulty-curve (that long combo is hardcore) but might I suggest a +3 weapon and at least 20 points in vigor before you try again?

Having the time of my life getting whooped by optional bosses.
If this is your first Souls-like game, just remember that your first playthrough will be the hardest and longest. You'll skip 40% of the things you wanted in the first place. The second playthrough will be your "real" run, with a somewhat different build. If you push for a 3rd-4th-etc run you'll enjoy it as any other game.
The real challenge to these games is this: finish it.
After you've done that, you'll understand the rush.
