DEXTERITY
Attribute required to wield advanced armaments.
Also boosts attack power of dexterity-scaling armaments, reduces casting time of Spells, softens fall damage, and makes it harder to be knocked off your horse.

in general if you get damage there you can fell of from the horse but i don´t know anymore then what the dexterity skill provides on information.
so iam not sure how the game mechanic exactly works.
I've been having this problem too. I don't think it's an in game mechanic like getting knocked off because I'll end up leaping off my horse at the most random moments mid combat. It's pretty easy to tell when an enemy knocks you off, but my guy will just leap off at random times when I'm fighting.
I actually switched from my PS5 controller to my Xbox controller and the problem became a bit less pronounced. In neither case was I really pounding on the stick so I don't think I was accidentally hitting LB3 but who knows. The clicks feel pretty distinct after all. All I know was that crap was really annoying when it happened.
You CAN change the button to get off the horse (it just shares an action with crouch so if you change crouch the dismount button changes too) but with the limited number of buttons on controllers it's kind of hard to really switch it to something else. I ended up trying to replace it with the up arrow on my dpad because it seemed the least utilized for my character, but that felt weird... Lol
