The way I found was best was to stop summoning the NPC and just use the jellyfish ashes instead so he doesn't get like 2x more hp.
If he's too strong though, there are a bunch of easier things to do a bit south of the castle and even though there are a ton of optional things like mini dungeons and the bosses in them, they all serve as a way to get better at the game, and get more runes to level up.
You could also set your summon sign down to help other players, in turn helping you to figure out his attack patterns and when to dodge.

Sorry, guys, I have played and beaten every from software game, and hit is just a badly designed boss. Period.
You can beat him early, it's just that it would take skill and knowledge, and those need to come from somewhere.
