Not everything is balanced 1:1 with maximum AR in mind. You get to stagger more easily and to From that apparently is worth the lower AR. Not my opinion, but obviously what the game tells us.
Also, some 'good' strength weapons don't even take Ashes, so the whole point is only academical as it is true for only like half the weapons. If it's true at all, not too sure on that right now.
There is the dex increases swing speed factor
-There is the poise factor
There is the raw dps verses raw speed dps among all weapons.
There's a lot of things to consider, prob in part bc dex does too much in this game? Maybe so imp

I just went and had a look at the tool you linked.
At +25, with 70 points of stat investment (assuming Wretch start to avoid having to deal with figuring out the rather minor effects of starting class minmaxing)
Giant-Crusher, two handed:
Heavy two handed (80 str): 947
Quality two handed (40/50 str/dex): 820
Heavy one handed (80 str): 878
Quality one handed (60/30 str/dex): 736
The strength build wins by over a hundred AR in both cases. Are you sure you didn't write mix up your numbers for which AR was which setup?
That said! Don't throw dex or other stats under the bus for them not giving STR as much love in a game where 99% of the colossal weapon defenders are-
A: No see it still good compared to weapons you use the entire movset of because I just spam jump attacks, with jump attack talisman, and jump attack armor.... that means it is good I'm not coping.
B: But my colossal sword has a crouch stab guys. a crouch stab!
Granted part of why I'm not excited about giving the giant crusher the time of day even if I'm a maniac often overloading myself with big swords and a large club at the same time, is not raw damage, but how lackluster "it is weak to blunt, honest!" and "No see, blunt has better flinch/anti poise, honest!" is in this game.
Like, it looks amaaaaaazing. I love it conceptually. But imagine all that effort to one hand the giant crusher only to drop down to a smaller, faster, non-strike weapon against "oops this ♥♥♥♥♥♥♥ is resistant to strike teehee where is your jump attack spam god now?" antics.
Can't trick someone so stupid they already did it!
