After handing over some deathroot to Gurranq the Clergyman, I decided to check out the move set of a rapier. I was at the door when I was doing this but this somehow triggered him to go all ape man. So, I guess don't do any atks while in the Sanctum.

He's scripted to do this, punch him a few times and he will apologize

Just how many deathroots have you given him so far ?
At 4 he becomes mad and you have to calm him down (without killing him).

He goes mental after you hand over certain amount of deathroots. He gave me a heart attack when i teleported to his sanctum and he just barreled toward me and oneshot me.

I guess this was foreshadowing him taking on a baleful shadow form later on when you fight him as Maliketh? Similar to what happens to Blaidd?

after the 4th deathroot he goes aggro. you just need to shave off 10% of his HP and he'll back down. Also, be sure to unsummon and spirit ashes you have out at this point because they won't stop attacking him.

No, he recognizes you in Farum Azula if you give him all of the deathroots. Presumably, Farum Azula exists outside of time and his Gurranq form in Caelid is an illusion. It’s weird.

Nah, both are the same, Gurrad (i think that was it?) is an alias he went by after his failure, out of shame.

Further dialog also confirm this, in fact if you complete his quest first, he has a different dialog during the boss fight.
