You know, this game is true to Fromsoft's hardcore D&D design philosophy. There is no way they would implement horse cusomizations, that wouldn't also change stats, and the horse is not made with different stats in mind. They also would take a lot of work for that... but hey, never say never! I mean, I was shocked when I see we can alter some armor pieces, like removing the cape, but it also reduces the stats, but that makes sense, hardcore compromise right there.
Torrent in the dungeons would only make sense if you wanna speed run them, lol. Come on, I'm glad we don't get the horse everywhere, otherwise every single corridor would have to way bigger for horse combat and movement, that it would just be silly. I like my creepy dark, small corridors.
