1. Dark Souls 3 + Elden Ring
2. Bloodborne
3. Dark Souls 1
4. Dark Souls 2
Haven't played demon souls or sekiro yet
2. DS1
3. KF2
4. KF3
4. KF1
5. Elden Ring
6. DS3
KF1 just barely makes it above ER, solely because of how awful ER gets later in. The first half is probably above KF2 or DS1.
Haven't played BB or Sekiro, but from how they look they both seem like they'd be somewhere higher than ER on the list, maybe above KFs. Haven't played KF4 or Demon's Souls yet, but I imagine they both rank above KF2. No idea how AC and other from games are.
2: DS2
3: DS1
4: ...
5: Elden Ring. Far far below the rest.
Sure, there's some nitpicks here and there, but it's truly amazing.
My only "negative" (maybe) would be that seems waaaay too long, and that makes me hesitate about playing again after finishing it (like I did with the others).
Also, I miss some of the Ds3 stuff, but mostly is because I know what weapon to use there, and I have no clue on what to use in Elden. I guess I also miss being an "Ashen one" or a "Hollow".
As for ranking them... I love all of them, except Dark souls 2 (which I hate but not to the point of not playing from time to time), and Bloodborne (cause I didn't played it yet, still waiting for the pc port :P)
Cheers

Elden Ring
DS2
(Haven't played Bloodborne or Demon Souls so I can't comment on those 2) I feel like I have a lot of gripes with Elden Ring, it's not a bad game by any means but I think From actually does better in the more linear format. I'm in my second run of Elden Ring and probably my biggest nitpick is how many of the enemies are reused (specifically the bosses) to me it sort of takes away from the special factor of fighting the bosses for the first time, no other Souls game is as egregious with this not even DS2 with the exception of maybe Ludd and Zallen and the Vordt summon in the Elana fight. I also found in general the boss design to be a bit boring compared to some of the other souls bosses, for me so far nothing can really top Gael :D

4.DS2
5.DS3
Never played Sekio don't like no PvP
Haven't played Demon Souls didn't have a Playstation when it came out and can't get a hold of the fabled PS5
I think the reason i don't like DS3 is I was just burnt out on DS in general and it just felt like to much of the same while playing it.
