Fire Giant can be distracted with Jellyfish and the Black Flame Tornado of Godskin weapon i was using did 4-5K damage to him per charged L2....
+ Horse riding makes u evade almost everything.
I think this fight depends a lot on which weapons u are using and how good your build is vs that specific enemy.
IN Phase 2 his Hands take absurd amount of damage with the right weapons.
I was really really afraid of him but did beat him in 12 tries >-<
now i am stuck @ Godskin Duo for 2h.....
i may just sleep arrow cheese the fight which is not fun but its just a bs fight.
So i kinda feel you.
Lategame fights are mostly really terrible
the best part about walls is breaking them down
And that foot smelling giant is the beginning of an endgame boss rush that I'd say was the least favorite part of the game (versus exploring).
If you're open to co-op, you might be able to find someone to assist. But understandable if you're depleted the fulfillment factor out of the game too.

cuz i found that one rather easy, first bit just hit his injured leg, second bit hug him and just clobber him, especially if he rears back and starts shooting fireballs into the sky, none of them hit you if you just sit under him
Here's some things I learned in my huge frustration, and confusion.
-PPL are so cheese with status proc most DO NOT know most of him in phase 2 is extremely resistant to all damage short of heavy magic, bleed spam.
Second phase is where I had trouble as well, here is why:
Turns out it creates the illusion you must hit the hands, and body for damage, THIS IS NOT TRUE!
HIS OTHER LEG!!! (omg so annoying,) takes the same damage as phase one SO LONG AS you attack the 'lower' ankle with the big metal ankle bracelet on it.
Thats the spirit!!!!!!
Sounds like it's time for you to put the controller down, go play something else. Frustration with a game will lead to you not liking it if you keep forcing yourself to play it. Perhaps you'll come back and find a fresh approach.
