I imagine that the Dex E & D scaling will be minimal damage and probably not worth the stat investment.
Bleed buildup also scales off Arcane so you would want to increase it if you wanted quick bleeds.
From your posts it sounds like you want to maximise damage with just Strength and no other stat investment which I don't think will be possible for a bleed build.
Not specifically because it has bleed, but because it is basically twice as long as the morning star. People lose their minds overvaluing crouch stabs weapons like the morning star got, and I'm over here roll catching NPC invaders a million times easier just because the spiked club is not as uselessly short as the morning star.
While I still need to get around to looting it here. in DS3 I loved the Flamberge. Bleed was secondary. The fact it was a bastard sword style moveset with the stance art (I miss that being a sure thing PvE guard break against recycled greatshield knights), that also HAPPENED to have bleed that never really triggered except on the killing blow or "they had 2% health left. thanks for covering that, bleed" reasons.
Well yeah. That is how things work. You lose some base damage in exchange for better scaling.
