Gabriel and the virtues attack v1 because they are trying to prevent v1 from going further into hell and freeing everyone from their eternal punishment. Gabriel is the will of god, and the virtues do Gabriel's dirty work, and god intended for people who went to hell to suffer eternal punishment, so by killing v1, they are carrying out gods will.
the husks attack v1 either because they lack a higher intelligence and attack everything they see, or because v1 attacks them first, for their blood.
the machines attack v1 both to reduce competition, and also because the machines have blood inside of them(which is fueling them), and v1s only goal is to obtain blood, and it is not limited to killing husks and demons to obtain that blood.
The corpse of King Minos is controlled by the snakelike parasites he once controlled, and they lack a higher intelligence, similar to other husks, so they attack the player.
The machines and the husks both attack v1, instead of each other, because v1 is a much bigger threat to them than they are to each other.
and to close out the round up, Minos Prime attacks because of your crimes against mankind being unforgivable.
the reason enemies "work together" against you, is for the same reason they spawn. ultimately its a game, and you have to suspend your disbelief when machines ignore demons and husks to attack you.
