Because it's technically not his heart. According to hakita in a stream i believe, he said that you're not actually inside of his corpse. The entrance just happens to be through his mouth, but the whole layer is not inside of him. So that heart is just part of the gluttony layer.

"The space in hell is dreamlike where it doesn't connect physically, it's vague ideas of space. It's different for every person in a way. It transforms differently in a way where it has to make a way to get to the next layer, and the only way down in this case was down minos' throat." is basically what he said though i did shorten it a bit.
