Where do all the souls for all the demons in hell come from if Humanity is extinct? Won't the machines just run into the same problem that they did with humans when Hell is depopulated?

Why did the machines even exterminate mankind instead of farming us for blood?

maybe humanity only just died? v1 and v2 just want to survive so they ventured into hell to harvest blood from the demons.
and if humanity just got wiped out, hell would have LOTS of souls to turn into demons, hence being full.

I don't exactly think the robobois designed specifically to kill would think about what comes after all the humans are dead, same goes for all the demons. V1's skills include punching bullets and going fast, i highly doubt they would think about farming people when just shooting them seems to work.
