They used the game's writer Sam Lake's face. Either due to budget or thought it was funny. The guy himself makes fun of the face.

They hired a professional actor for MP2.

Well, that's because you need to take into account the context of the video game. The whole game takes place over a long period of time, as Max covers a very large area of New York, kills a bunch of people reads stuff, talks, gets drugged up, beaten up, tied to a chair... etc... During that time, he's totally busy and never once has a chance to stop to take a leak, let alone a dump. He probably thought that Roscoe was a quick stop and didn't relieve himself prior to the initiation of the whole journey. So, he actually was just corking it the whole game. Poor guy.

I think it looks great. I have no complaints about this game, honestly. They did a hell of a job and it's still one of the best games ever.
