You can easily see this by looking at the page of the Ultimate Collection bundle and scrolling down to see which products it contains.
Can't speak for the originals but people still play the remastered version online, doesn't take long to find random matches.
The visual updates are very nice as well, and ofc you have all the extra content from the DLC's etc.
Personally I like the remastered collection, and owning it didn't stop be buying the full collection for all the other games.
