yes, 2 airfields (or two barracks / Hands of Nod) double the production speed.
How to counter a bikerush? I've tried to figure it out myself. I've tried infantry, doesn't work as they are too slow to protect the harvesters. Harvesters are always on the brink of death against Nod.
In 1v1 Nod will always be dominant, just look at the leaderboard an check the replays of the top ten, nearly all of them seem to play Nod. I've watched about 50 replays, they all seem to come down to bike/buggy vs. bike/buggy :)
As I prefer to play as GDI, but I guess I will have to give up on Quickmatch multiplayer with all this typical Nod rush tactic all the time.
A few sandbags or chainlink fences scattered around your base can also help you delay things while building up those forces depending upon size of Nod bike rushes. Also, sending your own harrassment runs to their base early on with humvees, medium tanks or infantry helps a lot.
